Sante Fe Chicken
- 1 large ripe avocado
- 2 small ripe tomatoes, cut in wedges
- 1 small onion, diced
- 1 large clove garlic, crushed
- 2 Tbsp. chopped cilantro
- 3 Tbsp. lime juice
- 1 1/2 tsp. salt
- pepper to taste
- 1/2 tsp. chili powder
- 4 large corn tortillas
- 3 Tbsp. vegetable oil
- 4 skinless, boneless chicken breasts (about 1 lb.)
- 1 Tbsp. butter or margarine
- 1 Tbsp. orange marmalade
- lime wedges (to garnish)
- Peel avocado and cut into 1-inch chunks.
- Place in medium bowl with tomatoes, onion, garlic and cilantro.
- Sprinkle with 2 tablespoons lime juice, 1 teaspoon salt and pepper to taste.
- Toss gently, cover and refrigerate.
