Country Chicken Casserole
- 4 chicken breasts
- 1 green pepper, skinned, de-seeded and sliced
- 4 12 ounces button mushrooms
- 1 tablespoon all-purpose flour
- 2 tablespoons tomato paste
- 14 ounces chopped tomatoes
- 23 cup chicken stock
- 1 tablespoon dried herbs
- 12 teaspoon Tabasco sauce
- salt and pepper
- Heat the oil in a flameproof casserole, add the chicken and fry until lightly browned on all sides.
- Remove the chicken from the pan with a slotted spoon.
- Set aside.
- Add the vegetables to the pan and fry for 5 minutes or until softened.
- Stir in the flour and gradually add the remaining ingredients, including the chicken, stirring thoroughly.
- Bring to the boil, cover and simmer gently for 40 minutes, stirring occasionally.
- Serve.
