Winter Strone Soup
- 3/4 c. Great Northern beans
- 2 1/2 c. water
- 1/2 can beef, rinsed
- 1/2 c. onion, chopped
- 1 can tomatoes
- 3 1/2 c. water
- 1 tsp. oregano
- 1/4 tsp. garlic powder
- 1/4 tsp. pepper
- 2 bay leaves
- 1/2 c. macaroni, uncooked
- 1/2 can corn
- 1/2 can green beans
- 1/2 can carrots
- Bring water to a boil, add beans and boil for 2 minutes. Remove from heat, cover and soak 1 hour or overnight in refrigerator.
- Cook beef and onion in hot frying pan until beef is warmed.
- Stir beef mixture into beans.
- Bring bean mixture to a boil.
- Reduce heat, cover and boil gently until beans are tender (1 to 1 1/2 hours).
- Break up large pieces of tomatoes.
- Add tomatoes and remaining ingredients, except macaroni, to bean mixture.
