Salmon Chowder

  1. Chop and dice all vegetables.
  2. Cook in olive oil until soft. Coat with flour and brown 2-3 minutes until truly browned.
  3. Add 5 cups of liquid all at once.
  4. Stir until boiling and thickened. Reduce heat, add smoked salmon (cut into small pieces), oregano or dill and salt and pepper.
  5. Cook until well heated.
  6. Add raw salmon for the last 5 minutes of cooking.
  7. Add sour cream just before serving.
  8. Garnish with parsley.
