Black Cherry Jell-O Cheesecake

  1. Preheat oven to 350
  2. Mix together 1/4 cup sugar, graham cracker crumbs and melted butter.
  3. Press into 9x13 baking dish.
  4. Bake for 15 minutes then cool completely.
  5. Boil 1 cup of water only for the Jell-O.
  6. Add water to Jell-O and stir until dissolved.
  7. Set aside and let cool for 15 minutes
  8. In a large bowl, cream together remaining sugar, cream cheese and vanilla.
  9. Add cooled Jell-O to cream cheese mixture and blend well.
  10. Add cool whip and blend well.
  11. Fold in pineapple.
  12. Spread mixture evenly over cooled crust and chill for 2 hours or until set.
  13. Sprinkle graham cracker crumbs lightly over dessert for garnish.
