Black Cherry Jell-O Cheesecake
- 1 1/4 cup sugar (reserve 1/4 cup for crust)
- 1/2 cup butter (melted)
- 1 3/4 cup graham cracker crumbs
- 1 large box black cherry Jell-O (do not follow box directions)
- 1 box (8 ounces) cream cheese softened
- 1 tsp vanilla extract
- 1 can (20 ounce)crushed pineapple drained
- 1 (8 ounce) container of cool whip
- 1 cup boiling water
- Preheat oven to 350
- Mix together 1/4 cup sugar, graham cracker crumbs and melted butter.
- Press into 9x13 baking dish.
- Bake for 15 minutes then cool completely.
- Boil 1 cup of water only for the Jell-O.
- Add water to Jell-O and stir until dissolved.
- Set aside and let cool for 15 minutes
- In a large bowl, cream together remaining sugar, cream cheese and vanilla.
- Add cooled Jell-O to cream cheese mixture and blend well.
- Add cool whip and blend well.
- Fold in pineapple.
- Spread mixture evenly over cooled crust and chill for 2 hours or until set.
- Sprinkle graham cracker crumbs lightly over dessert for garnish.
