Chocolate Peanut Butter Cheesecake-Filled Cupcakes
- Cupcakes
- 2 cups peanut butter chips
- Prepared chocolate cake mix batter
- 1-1/2 qt. PHILADELPHIA Cheesecake Batter
- Buttercream
- 3 cups unsalted butter, softened
- 4 tsp. vanilla
- 2 tsp. salt
- 1 qt. powdered sugar
- 1-1/2 cups creamy peanut butter
- Cupcakes: Stir peanut butter chips into cake batter.
- Portion about 1-1/2 oz.
- batter into each cupcake liner.
- Bake as directed on cake mix package.
- Cool completely.
- Core out the middle of each cupcake.
- Fill each with 1 oz.
- Cheesecake Batter.
- Buttercream: Cream butter, vanilla and salt with electric mixer fitted with paddle attachment until smooth.
- Add sugar, 1/2 cup at a time, mixing until fluffy.
- Add peanut butter; mix until completely blended.
- Spoon into pastry bag fitted with a star tip.
- Decorate tops of each cupcake with about 1 oz.
- Buttercream.
