Louisiana Chicken Jambalaya Recipe
- 2 lbs. grnd chicken giblets
- 1/2 pound raw grnd beef
- 2 c. minced onions
- 1 c. minced celery
- 3 cloves garlic
- 1 teaspoon tomato paste
- 1 c. cool water
- 3 c. cooked rice
- 1/2 c. minced green onion tops and parsley
- 2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/3 teaspoon red pepper
- 1/2 c. veg. oil
- Put veg.
- oil in heavy iron pot.
- Add in onions, celery, garlic and tomato paste.
- Cook over medium heat till onions are wilted.
- Add in giblets and meat.
- Season with salt, black and red pepper.
- Cook till meat begins to brown.
- Stir often.
- Add in 1 c. cool water; cook about 40 min, stirring constantly.
- Add in green onion tops and parsley and simmer over low heat in uncovered pot for 15 min.
- Add in cooked rice and serve.
- Serves 10.
