Curried Papaya Kapalua
- 2 c. creamed cottage cheese
- 2 c. cream cheese
- 4 Tbsp. chopped chutney
- 2 tsp. curry powder
- 1/2 c. thinly sliced water chestnuts
- 3 oz. raisins
- 1/4 c. sugar
- 1 tsp. cinnamon
- 5 or 6 papayas
- 1/2 stick (1/4 c.) unsalted butter, melted
- In a bowl, combine cheeses, chutney and curry powder and blend the mixture until it is smooth.
- Add water chestnuts and raisins and combine the mixture well.
- In a small bowl, combine sugar and cinnamon.
- Halve lengthwise and seed papayas.
- Divide the cheese mixture among the halves, sprinkle halves with the cinnamon-sugar and drizzle them with butter.
- Arrange the halves on a lightly buttered baking sheet and bake them in a preheated very hot oven (450u0b0) for 15 minutes or until the tops are golden and transfer them to a heated serving dish.
- Serves 10 to 12.
