Kiwi Style Eggs Benedict
- 2 slices brown bread
- 4 slices 97% fat-free shaved leg ham
- 2 eggs (@ room temp)
- 40 ml tomato sauce
- 1 teaspoon white vinegar
- Bring a pot of water to the boil, add the vinegar.
- Swirl the water in a circle motion
- Crack a egg into a small bowl then carefully drop into boiling water.
- Once cooked to your liking remove the egg from the pot and cool in cold water.
- Cook the 2nd egg and place in cold water.
- Toast the bread and top with ham then tomato sauce.
- Remove pot from the heat and place eggs back in water for 1 min.
- Top toast with eggs and serve.
