Rapper Dapper Snappers (aka Salmon Rolls)
- 1 lb fresh salmon fillet
- 1 cup fresh spinach(chopped)
- 1 1/2 tsp canola oil or veggie
- 1/2 cup finely shredded carrot
- 2 scallions,chopped
- 1 clove garlic,minced
- 1 tsp fresh grated ginger
- 1 tsp chilli garlic paste (or to taste)
- 1 salt and pepper(to taste)
- 1 phyllo dough/egg roll wrap
- Heat 1 tsp.
- oil in non stick skillet over medium heat.
- add spinach,carrots,scallions,garlic and ginger cook until crisp-tender,about 5 min.
- stir in chilli paste.
- set aside.
- cut salmon into 1x3 inch strips.
- heat oven to 375F
- place wrap on flat surface.
- Brushing with a small amount of oil.cover egg roll wrap with damp papertowel while you are working with them to prevent them from drying out.
- place about a tablespoon of spinach mixture on wrap then place salmon on top.
- roll into a log and gently twist the ends (if using phyllo) roll like egg roll otherwise.
- Place on ungreased baking sheet.
- repeat
- brush firecrackers lightly with oil and bake 18 to 20 minutes or until wrap,is crisp and golden brown.
- serve with sweet and sour sauce (Taste of Thai) sweet red chilli sauce is a good choice.
