smoked chicken quesadillas
- 1 cup chopped leftover smoked chicken
- 1 cup shredded cheese, cheddar
- 1/2 cup onion dip from mix
- 4 tortillas, burrito size
- preheat electric griddle or skillet to 375.
- warm tortillas on lightly oiled griddle, flip tortillas over
- spread onion dip on half of tortilla, sprinkle chicken then cheese.
- fold tortilla in half over topping and push to compress.
- spread top half of tortilla with butter, file folded tortilla, brush that side with butter.
- cook til filling melts and outside is browned.
- cut into 4 pieces and serve with salsa...
- and all because our mini mart didn't have sour cream on hand...every situation has an opportunity to those who seek it!
