smoked chicken quesadillas

  1. preheat electric griddle or skillet to 375.
  2. warm tortillas on lightly oiled griddle, flip tortillas over
  3. spread onion dip on half of tortilla, sprinkle chicken then cheese.
  4. fold tortilla in half over topping and push to compress.
  5. spread top half of tortilla with butter, file folded tortilla, brush that side with butter.
  6. cook til filling melts and outside is browned.
  7. cut into 4 pieces and serve with salsa...
  8. and all because our mini mart didn't have sour cream on hand...every situation has an opportunity to those who seek it!
