Lazy Lasagna
- 1 lb ground beef
- 3 cloves garlic, minced
- 2 (4 oz) cans mushrooms
- 1 Tbsp worcestershire sauce
- 1 tsp parsley flakes
- 1/8 tsp pepper
- 1 (16 oz) carton ricotta cheese
- 8 oz shredded mozzarella cheese
- 1 cup chopped onion
- 4 cups cocktail vegetable juice
- 6 oz can tomato paste
- 1 tsp oregano leaves
- 1/2 tsp salt
- 8 oz pkg uncooked lasagna noodles
- 1 1/2 cups grated parmesan cheese
- In large saucepan, brown ground beef, onion and garlic; drain.
- Stir in vegetable juice, mushrooms, tomato paste, and seasonings.
- Simmer 30 minutes, stirring occasionally.
- Heat oven to 350 degrees.
- In 13 x 9 inch pan, layer half each of uncooked noodles, meat sauce, ricotta cheese, parmesan, and mozzarella cheese; repeat layers.
- Cover with foil.
- Bake for 30 minutes. Remove foil and bake for another 15 minutes.
- Cottage cheese can be substituted for Ricotta Cheese.
