Lazy Lasagna

  1. In large saucepan, brown ground beef, onion and garlic; drain.
  2. Stir in vegetable juice, mushrooms, tomato paste, and seasonings.
  3. Simmer 30 minutes, stirring occasionally.
  4. Heat oven to 350 degrees.
  5. In 13 x 9 inch pan, layer half each of uncooked noodles, meat sauce, ricotta cheese, parmesan, and mozzarella cheese; repeat layers.
  6. Cover with foil.
  7. Bake for 30 minutes. Remove foil and bake for another 15 minutes.
  8. Cottage cheese can be substituted for Ricotta Cheese.
