Minted Zucchini With Golden Raisins
- 1 12 teaspoons olive oil
- 1 lb zucchini, thinly sliced
- 14 cup golden raisin
- 2 tablespoons chopped of fresh mint
- 14 teaspoon salt
- pepper
- In a large nonstick skillet heat oil to medium high.
- Add zucchini and cook, stirring often, until crisp-tender, about 5 minutes.
- Add raisins, mint, salt and pepper.
- Toss to combine and serve.
