Eight-Treasure Golden Rice Pudding
- 1 cup glutinous rice, uncooked
- 3/4 cup cold water
- 1/4 cup sugar
- 2 Tbsp. Bird's Custard Powder
- 2 Tbsp. canola oil
- 1/2 cup Back to Nature Trail Mix - Almonds, Raisins, Cranberries and Pistachios
- 1/4 cup red bean paste
- Cook rice and water in rice cooker following manufacturer's directions.
- Stir in sugar, custard powder and oil.
- Place trail mix in 3-cup heatproof bowl sprayed with cooking spray; cover with half the rice mixture, pressing onto bottom and up side of bowl.
- Spread with bean paste.
- Top with remaining rice, firmly pressing rice into bowl with back of spoon.
- Cover with foil.
- Place bowl on rack in pot or steamer.
- Steam over boiling water 1 hour.
- Remove pudding from steamer.
- Run knife around edge of pudding; unmold onto plate.
- Serve warm.
