Honey Baked Beans Hawaiian Style(Serves 48 - Three Gallons)
- 6 lb. pinto beans
- 1 1/2 gal. water
- 1 lb. salt pork, cubed
- 1 lb. onions, sliced
- 3 bay leaves
- 2 c. honey
- 2 1/2 c. pineapple juice
- 2 c. cider vinegar
- 1 1/2 qt. ketchup
- 1 c. soy sauce
- 3 Tbsp. dry mustard
- 1 Tbsp. garlic powder
- 2 qt. canned pineapple chunks (reserve juice)
- 2 qt. green and red bell pepper, cut in 1-inch chunks
- Soak beans overnight; drain and cover with fresh water. Add salt pork, onions
- and
- bay
- leaves.
- Cooktor
- 1 hour or until beans are
- just
- tender.
- Drain, reserve cooking liquid. Combine honey,
- pineapple
- juice, vinegar, ketchup, soy sauce, dry mustard and garlic powder.tix until blended.
