Cherry Dessert
- 1 pkg. miniature marshmallows
- 2 Tbsp. milk
- 1 can pie cherries, drained (save juice)
- 3 Tbsp. cornstarch
- 3 Tbsp. water
- 1 tsp. almond extract
- 1 c. sugar
- 1 c. chilled evaporated milk
- 1 graham cracker crust
- Melt marshmallows and milk in double boiler.
- Cool completely. Mix together in pan cherry juice, cornstarch dissolved in water, and boil until thick.
- Add cherries, sugar and almond flavoring to thickened mixture.
- Cool completely.
- Whip chilled milk and add to cooled marshmallow mixture.
- Beat until well blended.
- Pour 1/2 marshmallow mixture in crust.
- Put layer of cherry mixture on top. Top it off with rest of marshmallow mix.
- Sprinkle few graham cracker crumbs on top and chill thoroughly.
- Serves 8.
