Pumpkin Pie Streusel Loaf
- 1/4 cup packed brown sugar
- 2-1/4 cups flour, divided
- 1/2 cup butter, divided
- 1/2 cup chopped toasted pecans, divided
- 1-1/2 cups 100% wheat bran high fibre cereal
- 1/2 cup chopped dates
- 3/4 cup boiling water
- 1-1/2 cups canned pumpkin
- 1 egg
- 1/2 cup granulated sugar
- 1 Tbsp. Magic Baking Powder
- 1 Tbsp. pumpkin pie spice
- 1 tsp. baking soda
- 1/2 tsp. salt
- Heat oven to 350 degrees F.
- Combine brown sugar and 1/4 cup flour in medium bowl.
- Use pastry blender or 2 knives to cut in 1/4 cup butter until mixture resembles coarse crumbs.
- Stir in 1/4 cup nuts.
- Place cereal, dates and remaining butter in separate medium bowl.
- Add boiling water; stir until butter is completely melted and mixture is well blended.
- Add pumpkin and egg; mix well.
- Combine remaining ingredients in large bowl.
- Add cereal mixture; stir just until moistened.
- (Batter will be thick.)
- Pour into greased 9x5-inch loaf pan; sprinkle with cereal mixture.
- Bake 55 min.
- to 1 hour or until toothpick inserted in centre comes out clean.
- Cool bread in pan 10 min.
- Remove from pan to wire rack; cool completely.
