Haloumi and greens pasta
- 1 packages haloumi
- 1 chopped onion
- 2 clove garlic
- 1 broccoli
- 1/2 bunch asparagus
- 2 pints vegtable stock
- 1/2 packages penne pasta
- 1 chopped chilli
- 10 tbsp olive oil
- saute onion, garlic and chilli with half the oil in frying pan.
- Meanwhile, cut broccoli into small florrets, cut asparagus into pieces roughly an inch in size, and chop haloumi into cubes.
- meanwhile boil stock in a separate pan and add pasta.
- add broccoli florrets and chopped asparagus to frying pan and fry for 5 mimutes.
- then add haloumi and fry for a furthur 5-10 minutes depending on personal taste
- when pasta cooked, drain and return to pan with olive oil.
- add veg, stir and serve.
