Amigo Pie
- 1 lb. ground beef
- 1 c. chopped onion
- 2/3 c. chopped tomato
- 1/2 c. pitted ripe olive slices
- 1 Tbsp. chili powder
- 3/4 tsp. salt
- 1/2 tsp. pepper
- 3/4 c. cornmeal
- 1/4 c. flour
- 1/2 tsp. baking powder
- 1 c. hot water (not boiling)
- 2 Tbsp. margarine, melted
- 1 1/2 c. shredded Cheddar cheese
- 1/2 c. pitted ripe olive slices
- Brown meat; drain.
- Add onion, tomato, 1/2 cup olives and seasonings.
- Cook until onion is tender.
- Combine cornmeal, flour, salt and baking powder.
- Add water and margarine; mix until smooth. Stir in 1 cup cheese and 1/2 cup olives.
- Pour cornmeal mixture into greased 9-inch pie plate.
- Spoon meat mixture into center of cornmeal mixture and press down gently.
- Bake at 400u0b0 for 25 minutes.
- Top with remaining cheese.
- Garnish with additional olive slices, if desired.
- Makes 6 servings.
