Chicken Crepes Elegante

  1. Heat butter in saucepan.
  2. Blend in flour, salt, pepper and thyme.
  3. Cook over low heat until bubbly, about 3 minutes.
  4. Remove from heat.
  5. Stir in chicken broth and milk, whisking vigorously to blend.
  6. Return to heat and cook and stir until sauce is smooth and thickened.
  7. Add cubed chicken, sauteed mushrooms and parsley. Taste and correct seasoning.
  8. Add sherry just before serving and heat through.
  9. Place about 1/3 cup chicken
  10. mixture in center of each cooked crepe and roll up.
  11. Garnish with small amount of filling and sprinkle of parsley.
