Carrot Cake Muffins

  1. Sift together flours, sugar, baking powder, baking soda, cinnamon and salt.
  2. Stir in carrots, raisins, walnuts and apple. In another bowl, beat egg with oil, vanilla, applesauce and orange juice.
  3. Stir into flour mixture until batter is just combined. Spoon batter into muffin tins sprayed with nonstick cooking spray, filling them to the top.
  4. Bake at 350u0b0 for 35 minutes or until springy to the touch.
  5. Cool in tins on rack for 5 minutes.
  6. Turn out and cool.
