Border Style Bean Soup Recipe
- 3 c. Pinto beans
- 8 c. Water
- 1 lb Grnd beef
- 1 Tbsp. Veg. oil
- 1 med Onion
- 1 lrg Garlic clove
- 1 Tbsp. Chili pwdr
- 1 Tbsp. Dry parsley
- 1 Tbsp. Dry celery
- 1 can Tomatoes
- 2 x Carrots
- Wash beans; cover with water and bring to a boil.
- Cut heat to low and allow beans to simmer about an hour.
- Saute/fry onions and garlic in oil and add in grnd meat.
- When brown, add in chili pwdr.
- Add in meat, parsley, celery and tomatoes to beans.
- Return to boil; cut heat again to low.
- Cook about 2 hrs longer.
- Add in sliced carrots during last hour of cooking.
- Salt and pepper to taste.
- Serve with corn bread.
- Serves 12.
