Chocolate Almond Wafers
- 1 cup sugar
- 3/4 cup Land O Lakes Butter, softened
- 3 (1-ounce) squares unsweetened baking chocolate, melted
- 1 Land O Lakes Egg
- 1 teaspoon almond extract
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup blanched almonds, chopped
- 2 (1-ounce) squares bittersweet baking chocolate
- 2 (1-ounce) squares white baking chocolate
- 2 teaspoons shortening
- Combine sugar, butter, melted chocolate, egg and almond extract in bowl.
- Beat at medium speed, scraping bowl often, until creamy.
- Add flour, baking powder and salt; beat at low speed until well mixed.
- Stir in chopped almonds.
- Divide dough in half.
- Shape each half on waxed paper into 12x1 1/4-inch log.
- Wrap in waxed paper or plastic food wrap.
- Refrigerate 2 hours or until firm.
- Heat oven to 350F.
- Cut logs into 1/4-inch slices with sharp knife.
- Place 1 inch apart onto ungreased cookie sheets.
- Bake 9-11 minutes or until set.
- Cool completely.
- Place bittersweet chocolate and 1 teaspoon shortening in bowl.
- Place white baking bar and remaining shortening in another bowl.
- Microwave on Medium (50% power) 2-3 minutes or until melted.
- Drizzle cooled cookies with both glazes.
