Mandarin Orange Salad
- 1/2 c. sliced or slivered almonds
- 3 Tbsp. sugar
- 1/2 tsp. salt
- dash of pepper
- 1/4 c. vegetable oil
- 1 Tbsp. fresh parsley
- 2 Tbsp. sugar
- 2 Tbsp. vinegar
- 1/2 head romaine lettuce
- 1/2 head red leaf lettuce
- 1 c. chopped celery
- 1/4 c. chopped green onions
- 1 large can mandarin oranges
- Cook almonds and sugar (3 tablespoons) over low heat.
- Stir while cooking until caramelized.
- Spread on aluminum foil sprayed with Pam.
- Allow to cool, then break into small pieces.
- Mix salt, pepper, oil, parsley, sugar and vinegar in bowl or salad dressing container (you may want to double the amount of dressing if you like a lot).
- Chill until ready.
