Cranberry-Mallows Pie
- 1 (3 oz.) pkg. raspberry flavored gelatin
- 1 c. boiling water
- 1 3/4 c. (1 lb. can) whole cranberry sauce
- 1 c. (8 3/4 oz. can) crushed pineapple, drained
- 9-inch graham cracker crust
- 2 c. Kraft miniature marshmallows
- 1/4 c. milk
- 1/2 tsp. vanilla
- few drops green food coloring (optional)
- 1 c. heavy cream, whipped
- Dissolve the gelatin in the boiling water.
- Chill until slightly thickened. Fold in the cranberry sauce and pineapple. Pour into chilled crust.
- Chill until firm.
- Melt the marshmallows with the milk in double boiler. Stir until smooth.
- Add the vanilla and food coloring.
- Chill until thickened.
- Mix until well blended.
- Fold in the whipped cream.
- Spread over pie filling. Chill until firm.
- Makes 6 to 8 servings.
