Baked Rice Pudding Recipe
- 2 x Large eggs, slightly beaten
- 1/3 c. sugar
- 2 1/4 c. lowfat milk
- 1 tsp vanilla
- 1/4 c. raisins
- 1/4 tsp nutmeg
- 2/3 c. Minute Rice
- 1/2 tsp salt
- Set oven to 350 degrees F. Place ingredients in an ungreased 1 1/2 qt round casserole.
- Set casserole in a pie pan of warm water.
- Place pans in oven for 45 min.
- Mix will be set around the edge.
- Remove from oven.
- Stir gently.
- Let cold 1/2 hour without stirring.
- Serve hot or possibly cool.
- Makes 4 servings.
