Autumn Yam and Peanut Soup
- 1 teaspoon oil
- 1 cup onion, chopped
- 1 teaspoon ground cumin
- 1 lb yam, peeled and cut into chunks
- 1 large green apple, peeled and cut into chunks
- 1 (14 1/2 ounce) can chicken broth
- 1 (6 ounce) can apple juice
- 18 teaspoon cinnamon
- salt and pepper
- 12 cup creamy peanut butter
- In large saucepan over medium heat, heat oil.
- Add onions and cumin.
- Cook until onion is translucent, stirring occasionally.
- Add yams, apple, broth, apple juice, cinnamon, and salt and pepper to taste.
- Cover and bring to a boil.
- Reduce heat and simmer for 20 minutes, or until apples are tender.
- Add peanut butter.
- Stir until melted.
- Ladle into blender in batches if nessesary and blender until smooth.
- Return to pan.
- Heat through.
- To serve, ladle into bowls.
- Garnish with sour cream, chopped peanuts, and apple slices, if desired.
