Apricot Skillet Pork Chops
- 1 (17 1/2 oz.) can apricot halves, drained
- 4 (3/4-inch) pork chops
- 2 Tbsp. butter
- 1 Tbsp. cornstarch
- 2 Tbsp. brown sugar
- 1 tsp. grated orange peel
- 1/4 tsp. ginger
- 1 tsp. dried mustard
- 1/4 tsp. salt
- 2 Tbsp. lemon juice
- 1/4 c. dark raisins
- 1/8 c. green onion
- Cook chops in butter in electric skillet (350u0b0).
- Remove from skillet and keep warm.
- Mix cornstarch and sugar; add to skillet along with peels, seasonings and juice.
- Cook, stirring constantly, until sauce boils (1/2 minute).
- Add raisins.
- Reduce heat to 225u0b0.
- Cover and simmer for 5 minutes.
- Place chops in skillet and heat.
- Add apricots and onion just before serving and heat.
- Spoon sauce over chops and serve with apricots on chops.
