Cream Of Broccoli Soup
- 1/2 c. onion, minced
- 1 Tbsp. margarine
- 1 Tbsp. flour
- 10 1/2 oz. chicken broth
- 1 (10 oz.) pkg. frozen broccoli
- 1/2 tsp. tarragon, crushed
- 1/4 tsp. garlic powder
- 1/4 tsp. ground thyme
- black pepper to taste
- 1 c. nonfat milk
- Saute onion in margarine over high heat until soft.
- Add flour and cook 1 minute, stirring constantly.
- Gradually add chicken broth.
- Add broccoli, tarragon, garlic powder, thyme and black pepper.
- Bring to a boil.
- Reduce heat; cover and simmer 15 minutes or until broccoli is tender.
- Add milk and simmer uncovered 5 minutes.
- Add 1/4 at a time to blender and blend at medium speed until smooth.
- Return to saucepan and simmer until heated through.
