Spinach El Greco

  1. Use a non stick skillet and brown your onions until golden.
  2. Use a bit of oil if you wish.
  3. Medium heat apprx 10 minutes.
  4. Add mushrooms, if using, cook 2 minutes.
  5. Add your tomatoes, cook 2 minutes.
  6. Add Thyme, Oregano, Salt & Pepper.
  7. Add spinach,cover, Lift lid after 1 minute and flip the spinach, replace lid
  8. Do this one more time -Sprinkle in the almonds- your spinach will be wilted and ready.
