Wheat Berry Salad With Fruit & Feta
- 2 cups hard red wheat berries
- 12 cup dried cherries
- 1 cup roasted almonds
- 2 medium apples, peeled and cut into bite size pieces
- 1 tablespoon orange zest
- 12 cup orange juice (zest and juice of one orange)
- 1 tablespoon lemon juice
- 3 tablespoons olive oil
- 1 cup golden raisin
- 1 cup crumbled feta cheese
- 3 -4 tablespoons herbs, of your choice (can leave out)
- Starting with about 7 Cups of water, boil wheat for 1 hour, keeping the water level about an inch above the wheat.

- Roast Almonds by baking on a cookie sheet or pan at 400* for 10 minutes, stirring/flipping after 5 minutes.
- Set aside to cool, then chop to desired size.
- Peel and cut apples, finely grate orange zest, juice orange (chunks in the juice are okay.

- When wheat is done boiling (it should have a tender, rubbery consistency), drain and rinse with cold water.
- Drain well.
- My feta was herb-soaked in a garlic, olive oil, lemon juice, rosemary, dill mix.
- It adds a lot to the salad.
- Mix everything together.
- You can serve it right away, but it gets even better the next day.
