Chicken Soup with Kale
- 1/4 cup Kraft Zesty Italian Dressing
- 1 onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 2 cloves garlic, minced
- 2 carrots, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1 bay leaf
- 4 cups 25%-less-sodium chicken broth
- 1/2 cup orzo pasta, uncooked
- 1/2 lb. (225 g) boneless skinless chicken breasts, cut into thin strips
- 4 cups loosely packed stemmed kale leaves, chopped
- Heat dressing in large saucepan on medium heat.
- Add onions and garlic; cook and stir 5 min.
- or until crisp-tender.
- Add carrots, bay leaf and broth; stir.
- Bring to boil; simmer on medium-low heat 20 min., adding orzo for the last 5 min.
- Add chicken; cook 5 min.
- or until done.
- Stir in kale; cook 3 min.
- or just until wilted.
- Remove and discard bay leaf.
