Crab And Shrimp Gumbo(Or Shrimp And Okra Gumbo)
- 1/4 c. vegetable oil
- 1/4 c. all-purpose flour
- 2 onions, chopped
- 3 Tbsp. butter
- 4 c. chopped fresh okra
- 2 2/3 c. chopped, seeded or fresh tomatoes
- 2 large cloves garlic, minced
- 2 tsp. Worcestershire sauce
- 1/2 tsp. freshly ground black pepper
- 2 Tbsp. butter
- 2 1/2 lb. medium shrimp, shelled and deveined
- 2 1/2 qt. boiling water
- 2 chicken bouillon cubes
- 2 Tbsp. crushed red pepper
- 4 tsp. salt
- 2 bay leaves
- 1 tsp. ground allspice
- 1/4 tsp. thyme leaves
- hot cooked rice
- hot sauce (red)
- Mix oil and flour in pan; cook over low heat, stirring, until gravy is the color of dark brown but not burned.
- Saute onions in 3 tablespoons butter until soft, about 5 minutes.
- Stir in okra; saute until okra is tender, 3 minutes.
- Stir in tomatoes; saute 30 minutes.
- Saute green pepper and garlic in 2 tablespoons butter in skillet 5 minutes.
- Add shrimp; saute until pink, 5 minutes.
- Add shrimp mixture and all other mixtures to pot.
- Cook on simmer, covered, for 1 1/2 hours.
- Remove from heat for 10 minutes.
- Eat over rice.
