Barbecued Country Ribs
- 2 lb. country style pork ribs
- 1 tbsp. olive oil
- 1 md. onion, chopped
- 1 green pepper, chopped
- 1/2 cup chopped celery
- 4 tbsp. lemon juice
- 2 tbsp. brown sugar
- 3 tbsp. Worcestershire sauce
- 1/2 tsp. cayenne pepper
- 1 cup ketchup
- 1 cup water
- 1/2 tsp. dry mustard (mild
- hot)
- 1 tsp. celery salt
- Preheat oven to 425F, lay ribs in shallow 13x9 or larger pan, roast at 425F for 30 minutes.
- In the meantime make the sauce.
- Saute onion, pepper and celery in the oil until soft.
- Add all other ingredients; simmer for around 20 minutes.
- Pour sauce over ribs after the 30 minute roasting period.
- Reduce oven to 325 and roast for 1-1/2 to 2 hours.
- Serve over hot buttered noodles.
