Chicken Scampi
- 2 whole chicken breasts, boned, skinned and cut into bite-size pieces
- 1 large onion, sliced
- 1/2 tsp. lemon juice
- 1/2 tsp. salt
- 8 oz. linguine pasta
- 1/2 head fresh broccoli, cut into bite-size pieces
- 2 Tbsp. olive oil
- 1 large green pepper, cut into bite size pieces
- 1/2 tsp. pepper
- 1/4 c. grated Parmesan cheese
- clove garlic (more if desired)
- Heat olive oil in large fry pan or wok over medium-high heat. Add chicken and stir-fry about 5 minutes.
- Remove chicken and reserve.
- Add broccoli and stir-fry 4 minutes.
- Add onion and green pepper; stir-fry 5 more minutes.
- Add chicken to pan and stir-fry 5 minutes more.
- Sprinkle with lemon juice, salt and pepper.
- Boil linguine in large pot of boiling water; drain.
- Place pasta in large serving dish; top with chicken-vegetable mixture.
- Sprinkle with Parmesan cheese.
- Makes 4 servings.
