Southwest Casserole Dip
- 1 lb ground beef, cooked
- 12 cup salsa
- 12 cup taco sauce
- 12 cup chopped tomato
- 12 cup refried beans
- 10 drops hot sauce
- 1 teaspoon cumin
- 1 scallion, chopped
- 1 cup cornmeal
- 2 cups water
- 1 tablespoon butter
- 1 teaspoon garlic salt
- 1 teaspoon salt
- 1 tablespoon sugar
- 2 drops hot sauce
- 1 dash Mexican seasoning
- shredded cheese (optional)
- sour cream (optional)
- tortilla chips (optional)
- Saute chopped scallion.
- add to cooked ground beef.
- add remaining ingredients and simmer for 15 minutes.
- For base, combine all base ingredients & stir.
- Microwave for 5 minutes.
- Pour base into greased casserole dish.
- Bake for 10 minutes.
- Top with bean/beef mixture and bake another 20 minutes.
- Serve onto bowls or plates and if desired, top individual servings with shredded cheese and sour cream.
- Place tortilla chips around the dish.
