Sausage and Broccoli Rabe

  1. Trim ends of the broccoli rabe and cut into 3-inch pieces.
  2. Bring 2 inches water to a boil in a high sided skillet.
  3. Salt the water.
  4. Add the broccoli rabe and simmer 10 minutes, drain.
  5. Return skillet to the stove and heat extra-virgin olive oil over medium-high heat.
  6. Add sausage, brown and crumble 6 to 7 minutes.
  7. Add the broccoli rabe and stir to combine.
