Pear Relish

  1. Peel and thinly slice the onion into rings.
  2. Cover with cold water and soak for 30 minutes.
  3. Drain.
  4. In a small bowl (ceramic, not plastic, which will hold the smell forever), stir the sugar into the vinegar until dissolved.
  5. Add the drained onion.
  6. Cover tightly with foil and refrigerate for a few hours, stirring once or twice and pushing the onion rings under the vinegar.
  7. Use for salads and any dish requiring raw onion.
