Beef and Pork Chili with Beans

  1. Heat 2 tablespoons of the olive oil in a large skillet over medium heat.
  2. Add the onions and bell peppers and a sprinkling of salt, and saute until the vegetables are tender, 8 to 10 minutes.
  3. Add the jalapenos and garlic and saute for 2 more minutes; remove from the heat and set aside.
  4. Heat the remaining 2 tablespoons olive oil in a large pot over medium-high heat.
  5. When the oil is shimmering, add the ground pork and ground beef, and saute until browned, 10 to 15 minutes.
  6. Add the chile powder, cumin, oregano, salt, and cayenne.
  7. Reduce the heat, and cook, stirring, for about 6 minutes, until the spices form a thick paste on the meat.
  8. Add the beer, and cook, scraping up any browned bits on the bottom of the pan, for 2 to 3 minutes, until slightly reduced.
  9. Add the reserved onion-pepper mix to the pot, then the tomatoes and beef broth, and simmer for about 30 minutes.
  10. Add the beans to the chili and cook just until they are warmed through, 3 to 4 minutes.
  11. Ladle the hot chili into bowls; top with sour cream and scallions, and serve.
