Pampered Chicken
- 4 boneless, skinless chicken breasts (about 1 1/4 lb.)
- salt and white pepper
- 1 Tbsp. butter
- 3 Tbsp. finely chopped shallots
- 1 tsp. finely chopped garlic
- 4 plum tomatoes, cut into small cubes
- 2 Tbsp. red wine vinegar
- 1 Tbsp. tomato paste
- 4 Tbsp. chopped fresh parsley leaves
- 1 Tbsp. olive oil
- 1 tsp. dried tarragon
- 1/2 c. dry wine
- 4 Tbsp. drained capers
- Sprinkle the chicken with salt and pepper.
- Heat the oil and butter in a heavy skillet.
- Add the chicken breasts and saute over medium-high heat until lightly browned, about 5 minutes.
- Add the shallots and garlic around the chicken and cook briefly.
- Add the tarragon, tomatoes, vinegar, capers, wine and tomato paste. Stir and blend well; bring to a boil, cover and simmer for 5 minutes.
- Sprinkle with parsley and serve.
- Yield:
- 4 servings.
