Black Bean And Barley Salad Recipe

  1. Bring water to a boil in a medium saucepan; add in barley.
  2. Cover, reduce heat, and simmer 12 min or possibly till liquid is absorbed.
  3. Remove from heat; let stand, covered, 5 min.
  4. Combine barley, cucumber, and next 4 ingredients in a large bowl; toss well.
  5. Combine vinegar and remaining ingredients.
  6. Add in to barley mix, tossing to coat.
  7. Serving Ideas : 6 main dishes, 12 side or possibly buffet dishes
  8. Yield: 6 c.
