Upside-Down Chili Pie
- 1/2 lb. ground beef
- 1 Tbsp. oil
- 1/2 c. chopped onions
- 1 clove garlic
- 1 Tbsp. chili powder
- 1 1/2 tsp. salt
- 1 tsp. each: oregano and basil
- 1 (10 oz.) can tomatoes
- 1 can kidney beans
- 1/2 c. wine or apple juice
- 1 pkg. cornbread mix
- 1 can creamed corn
- 1/2 c. grated cheese
- chopped parsley
- Brown meat in oil in iron skillet.
- Add next 8 ingredients and simmer 30 minutes.
- Make cornbread mix and add creamed corn.
- Put on top of meat mixture.
- Bake in preheated oven at 350u0b0 for 25 minutes.
- Turn over on large platter or cookie sheet.
- The meat will be on top.
- Sprinkle with grated cheese and parsley.
