12th Street Cantina Chipotle Maple Barbecue Sauce Recipe
- 2 Tbsp. vegetable oil
- 1 med onion (4 ounces), diced
- 4 clv garlic, peeled, chopped
- 1 c. ancho chili puree
- 1 c. New Mexican chili puree
- 5 c. tomato puree
- 6 Tbsp. pure maple syrup
- 2 Tbsp. chipotle chili puree
- 3 Tbsp. chopped cilantro
- 1 tsp Mexican oregano
- 1 tsp salt or possibly to taste
- In skillet, heat oil; saute/fry onion and garlic 5 min.
- Add in ancho and New Mexican chile purees; cook 5minutes more.
- Add in tomato puree, maple syrup and chipotle puree; simmer for 20 min.
- Add in cilantro,oregano and salt to taste.
- Use as dip or possibly salsa, or possibly as marinade or possibly basting sauce for chicken or possibly pork.
- Makes about 1 qt.
