Tomato Vegetable Soup
- 1 md. onion, chopped
- 2 tbsp. butter
- margarine
- 4 cups water
- 2-1/2 lb. tomatoes, peeled and chopped
- 2 md. carrots, diced
- 1 celery rib, finely chopped
- 3 cubes chicken bouillon
- 1 tsp. sugar
- 1 tsp. dried basil
- 1/2 tsp. salt
- 1/2 tsp. dried thyme
- 1/8 tsp. ground mace
- 1/8 tsp. pepper
- In a large saucepan, saute onion in butter until tender.
- Add remaining ingredients.
- Bring to a boil.
- Reduce heat and simmer, covered, for 40 minutes or until vegetables are tender.
