Veggie Quiche
- 1 (9-inch) deep dish pie crust
- 2 Tbsp. butter or margarine
- 1 small onion, chopped
- 1 green pepper, chopped
- 1 small zucchini, chopped (about 2 c.)
- 1 c. sliced mushrooms
- 1 small tomato, diced
- 2 Tbsp. flour
- 3 eggs
- 1/2 c. milk
- salt and pepper to taste
- 1 c. shredded Cheddar and Swiss cheese
- Melt butter in a large frying pan.
- Add onion, green pepper, zucchini and mushrooms.
- Cook over medium heat 5 minutes, stirring at times.
- Add tomato and flour.
- Stir to blend flour.
- Beat together eggs, milk, salt and pepper.
- Sprinkle half of cheese in pie shell.
- Add veggies.
- Pour milk mixture evenly over veggies. Sprinkle with rest of cheese mixture.
- Bake at 375u0b0 for 35 to 40 minutes, or until knife inserted in center comes out clean.
- Makes approximately 6 servings.
- (Recipe also works well using a 1 1/2-quart casserole dish and low-fat cheese.)
