Chicken Pozole
- 2 lbs chicken breasts
- 2 (16 ounce) cans hominy
- 4 (8 ounce) cans chicken broth
- 12 cup chili powder
- 1 teaspoon cumin
- 1 12 tablespoons salt
- 2 chicken bouillon cubes
- 1 tablespoon olive oil
- 12 head cabbage
- 12 dozen radish
- Cube the chicken breast into medium size cubes.
- in a ziploc bag mix all the dry ingredients (chili powder, cumin and salt)
- add cubed chicken into to the dry ingredients allowing all the chicken to get covered with ingredients.
- in a non stick pan add olive oil and let pan get hot when hot enough add the chicken cooking it threw.
- add the broth, chicken and hominy into a pot.
- let the hominy cook for about 10 min and then
- add the chicken bouillon.
- let cook for about 30 more minutes and serve
- while waiting chop up cabbage and dice raddish.
- best served with cabbage and radish on top.
