Aubergine Chili With Couscous Recipe

  1. Peel aubergine and cut into 1-inch chunks.
  2. Put all ingredients in large kettle.
  3. Heat to a simmer and cook uncovered, stirring occasionally, till aubergine istender, 45-50 min.
  4. Add in water if too thick.
  5. Salt and pepper to taste.
  6. NOTES : I used a can of Rotel tomatoes and a can of diced tomatoes in place of the fresh ones, and the recipe was delicious.
  7. My only difficulty was finding canned tomatoes with relatively little added salt.
