Aubergine Chili With Couscous Recipe
- 1 lrg Aubergine
- 1 x Carrot minced
- 1 x onion minced
- 1 x green pepper minced
- 1 c. garbanzo beans cooked
- 1 c. pinto beans cooked
- 6 x tomatoes minced
- 1/2 c. picante sauce
- 1 c. water
- 3/4 c. couscous
- 3 Tbsp. chili pwdr
- 2 Tbsp. parsley minced
- 2 Tbsp. cilantro minced
- Peel aubergine and cut into 1-inch chunks.
- Put all ingredients in large kettle.
- Heat to a simmer and cook uncovered, stirring occasionally, till aubergine istender, 45-50 min.
- Add in water if too thick.
- Salt and pepper to taste.
- NOTES : I used a can of Rotel tomatoes and a can of diced tomatoes in place of the fresh ones, and the recipe was delicious.
- My only difficulty was finding canned tomatoes with relatively little added salt.
