  1. Preheat oven to 350 F. Spray an 8x8 inch pan with non-stick cooking spray.
  2. Set aside.
  3. In the large bowl of an electric mixer or food processor, cream together peanut butter, honey, vanilla and applesauce until smooth.
  4. Add cocoa powder, baking soda, and salt; mix again until smooth.
  5. Gently fold the first amount of chocolate chips into the batter.
  6. Pour batter into the prepared baking pan and smooth the top.
  7. I usually spray my spatula with cooking spray to help spread it out evenly.
  8. Sprinkle remaining chocolate chips over the top.
  9. Bake for 18-22 minutes or until the top is just set.
  10. Its OK if they look a little underdone; we want these to be fudgy!
  11. Plus they are vegan so you dont need to worry about them cooking all the way through.
  12. Remove pan from oven and set it on a rack.
  13. Allow them to cool for as long as you can.
  14. Cut into 12 delicious squares!
  15. Notes: These are awesome cold or frozen, too!
