Chicken And Pasta
- 3 (4 oz.) skinned, boned, chicken breast halves, cut into 1-inch cubes
- 2 medium size sweet red peppers, seeded and cut into 1-inch cubes
- 2 medium size sweet yellow peppers, seeded and cut into 1-inch cubes
- 10 oz. fresh mushrooms, sliced
- 2 cloves garlic, minced
- 1/2 c. chicken broth
- 6 oz. rigatoni, uncooked
- 1 Tbsp. olive oil
- 1/4 c. diagonally sliced green onions
- 1/4 c. freshly grated Parmesan cheese
- 1/4 tsp. salt
- 1/8 tsp. freshly ground pepper
- 1/4 c. chopped parsley
- Coat nonstick skillet with cooking spray.
- Place over medium-high heat until hot.
- Add chicken, pepper cubes, mushrooms and minced garlic.
- Saute 4 minutes or until chicken is lightly browned.
- Add chicken broth.
- Reduce heat to medium and simmer, uncovered, 2 minutes.
- Remove chicken mixture from heat and set aside.
