Portuguese Spiced Enchiladas And Beans
- 1 lb. pinto beans
- 2 Tbsp. shortening or oil
- 1 1/2 tsp. allspice
- 1 1/2 tsp. cumin
- 2 Tbsp. sugar
- 1 tsp. chili powder
- 1 garlic bud
- salt to taste
- 1 pkg. tortillas
- 1 lb. ground beef
- 1 small can Los Palmas enchilada sauce
- 3 Tbsp. shortening or oil
- 3 Tbsp. flour
- garlic salt to taste
- 1 can pitted olives, drained
- 1 lb. sharp cheese, grated
- 1 onion, chopped
- Cook beans 1 hour before adding spices.
- Melt shortening, 1/2 teaspoon allspice, 1/2 teaspoon cumin, 2 tablespoons sugar, 1 teaspoon chili powder, garlic and salt and cook until beans are tender.
- Brown ground beef, add 1 teaspoon allspice, 1 teaspoon cumin and garlic salt and simmer 10 minutes.
- Melt 3 tablespoons shortening.
- Add flour, garlic salt, sauce and 1 1/2 to 2 cans water.
- Cook until thickened like gravy.
- Using 1/2 the sauce, dip tortillas in sauce.
- Place 2 tablespoons meat, top with onion, 3 olives and cheese.
- Fold tortillas and place in baking dish. Repeat for 12 tortillas.
- Sprinkle remaining cheese over top and pour remaining sauce over tortillas.
- Bake at 350u0b0 for 15 minutes or until cheese is melted.
- Serve with beans.
